A 2 lb flank steak drained and wiped off
3 TBS of butter
1 bunch of spinach
4 oz of mushrooms
2 cloves of roasted garlic
1 bunch of green onions
1 lb of thick sliced shoulder bacon
6 oz of provolone
10-15 bamboo skewers

With a mallet accost the meat as if it were a criminal.
Pat dry with clean paper towels
Spread the butter on to the meat
Finely chop the mushrooms and spread them out on to the buttered side of the meat
Chop the green onions and spread them out with the mushrooms( add to taste)
Lay out an even layer of spinach over the onion mushroom mix
Cover everything with a layer of Provolone cheese
There should be a small end and a large end of the flank steak
Take the smaller end and start rolling it on top of it self making a log.
pin everything together with the bamboo skewers
wrap the outside with the bacon, don't be afraid to stretch the bacon.
you will have to adjust the skewers to get the bacon pinned to them as well.
With the log on its side with a carving knife or bread knife in to 1 3/4" or 2" thick slices
place on a large baking sheet

bake in the oven for 20min @ 400 deg
It should be med-rare to med
for a bit more broil for up to an additional 5 min

serve with a you homebrew of choice,
and a light salad
