Just tinkering with a possible RIS recipe. Never made one so not sure if I am way off or not. I definitely want it to be super chocolatey. I have been reading up and it seams that the cocoa powder can make the beer too bitter. Could I counter this by possibly adding some lactose? As for the secondary I was thinking about some cocoa nibs or coffee or vanilla bean or all three. I just want it to be really choclolatey. I also may adjust the hops, not really set on them but looking to be around 65-75 IBUs. The only commercial beer that has the level of chocolate I am looking for is Southern Tier's Mokah. This is a recipe for a 3.5 gallon batch.

7lb Extra Light DME
7oz crystal 120
7oz crystal 60
7oz chocolate malt
5oz pale chocolate malt
4oz roasted barley
3oz malto-dextrine
? oz cocoa powder at end of boil

1oz Nugget 60
.5 Nugget 30
.5 Nugget 15

Safale US-05

?Cocoa nibs in secondary.
