I recently started a rhubarb mead which isn't quite done but so far tastes amazing and I can tell I'm gonna love it. Mt friend has rhubarb growing at his house like crazy and next I want to do a rhubarb wine. Who can speak from experience and give me some pointers? I saw a recipe calling for 5 lbs. per gallon which sounds like it would be way too tart. Advice is appreciated.

I'm also planning my first batch of rhubarb wine, since the plants went crazy this year. After some research I've decided to try Yooper's recipe which uses 3 lb per gallon. Yooper has a lot of experience, and her recipes tend to be straightforward, producing dry wines with a decent amount of fruit which is what I like. It's in this post:

So I'll probably do the second rhubarb harvest tomorrow and get it started. Did you decide what recipe to make yet?

Jack Keller uses up to 7 lbs/gal. in his recipe:
