Store bought apple juice with 10lbs of rhubarb or blackberries. Fermented for 2 weeks, then into secondary and topped up with juice for another 2 weeks. Bottles and planning on aging for 10months.

It looks great!
I would rack to smaller carboys, though, or find another way to top those up. It's amazing the flavor difference a tiny bit of oxidation can make.
