hi i'm Paul in Canada. just started to get into all grain brewing. i have a pilsner right now that i am fermenting under pressure. it started at 1.064. 10 days later i tested it and it was full of gas and sitting at 1.032. i am thinking it is stuck. any ideas. the temperature is at 62-65 in my basement. it is a s-23 dry yeast.
 
hi welcome to the forum.

are you using hydrometer or refractometer . refractometer readings have to be adjusted once alcohol is present.

62-65 is plenty warm enough for s23 under pressure. ( cold was really the only thing that would make it take longer than ten days. ) so i have a feeling it is done and the gravity is lower than that.

as it is you would already be at 4.2 abv. pilsners for me come in at 4-5 . with a starting gravity of 1.064 you could end up at 7 ish percent which for me is more like ale territory.

A 7% Pilsner would be a Helles Bock according to BJCP guidelines. But back to the OPs question, if it’s not done, what should be the next step? I’d brink it up from the basement to regular room temperature and see if it finishes.
 
thanks people. i kegged it and got myself a hydrometer. it reads1.040 right now it's a little sweet but tastes ok. i started another brew. a Mexican lager using the same process. hydrometer reading is 1.046 and kegged it in the same location as the last. 2 days and the spunding valve is not reading any pressure yet. i set the valve at 8,5 psi. so it's a waiting game right now.

an update i saw no pressure on my spunding valve. i took it off to ensure it was assembled correctly . which it was. so i surcome to my curiosity and open my keg. i saw some bubbles thats a good sign and my hydrometer read 1.023 s oit is working althou slow. i closed it up and purged out the air hopefully. and left it with out 5psi. mu though is maybe my corny keg is leaking so i'll change all the o rings net time. am i correct in my assumption.
 
maybe i don't have good taste buds lol. nearly finish that batch waiting for the next on in the keg. already working better. maybe start a new one tomorrow going to try a fosters clone from wombat tv
