I found a recipe for a winter warmer that uses Danstar winsor dry yeast. My LHBS carries Notty or US-04. What do you think would be a better substitute?

I want to stick with dry yeast for this occasion.

notty is closer. windsor is for stouts and sweeter such, and us04 is for clean english ales. i have used notty when i ran out of windsor and vice-versa. not the same thing, but close enough for non-competition. save the us-04 for a good tasty pale ale or english ipa

I would go with US-04. It is a lower attenuating yeast like windsor, plus it flocculates much better - Windsor never seems to drop out easily for me. Notty will finish way drier than both windsor and us-04.

If I had to choose, I'd choose the S04. Both clear the beer well, but nottingham is far more attenuative, and may take the FG much lower than you'd expect. Windsor yeast is less attenuative, and I like it for stouts and beers that I want to finish higher. The closest of the two would be the S04.
