So I'm pretty close to my first Brett play date. My plan is to brew a 3 gal batch of Belgian dubbel and then drop 1 gal into a jug for Brett secondary.

Here's the thing: I have an oaked oatmeal stout recipe that I brew at 1 gal size and like a lot (1 gal of stout lasts me like 3 months). My Brett plans got me wondering about maybe taking that recipe and making an old ale out of it. The way I see it, I can do one of two things...

1. I can secondary he dubbel on oak cubes, then put my stout on top of that after bottling. This has 2 downsides. A) it'll be a while before I can make the stout and I'm running out of the current batch! B) I'm worried about how to get the Brett into the stout without getting the Belgian yeast into the stout.

2. I can brew a 1gal batch of stout on racking day and pitch half the Brett into each 1gal jug (I have 1 vial of WL Brett Brux in he fridge). The downside here is that I have to contaminate both of my 1gal jugs with Brett, and given that I live in a studio apt, I don't really have room for too many jugs. Therefore I need to keep some things clean.

Which way is best? Is there a third way?

No need to worry if the jugs are glass. Brett is not some super ninja bug. If clean the jugs and sanitize them you will be fine.
