I made a yeast starter on Thursday evening and left it on the stir plate til Friday and then placed in the the fridge to crash. I was to use it this weekend but plans have changed and I can't brew until next Sunday. Will it be ok? Should I just take it out of the fridge on Sunday, let it come up to temperature and just pitch?

I think you should add a bit of starter wort into it the day before, or even hours before you pitch.

No problems. On brew day decant the starter beer, let it warm to room temp while brewing, then pitch

You should be fine. I would just decant an pitch. There should be negligible loss of viability over that short period of time. Vitality should be even better than a tube of yeast you might buy at a home brew store.

People say you should be fine for a week or 2. After that you should do another starter.

You could play it safe and add a bit of wort to the brew prior to pitching it to get the culture working prior to the pitch.

But technically you shouldn't have to.
