I'm looking to brew a light easy to drink but tasty pale ale or high temp Lager (I don'y have much control over the temp 20-24°C typically in the summer).

It'll also be an extract brew. Any suggestions would be appreciated. I've looked and haven't really found what I'm looking for.

Thanks

Lee

That is pretty warm! The sooner you can control that fermentation temperature, the better your beers will be.

Off topic, but have you looked at the swamp cooler method? Give the forums a search.

That temp is pretty high for a warm lager fermentation (like a steam beer). What about a session saison or something like that. Saisons in particular benefit from a warmer fermentation.

Saison is a good suggestion. I've made a light LME Saison with an OG of around 1.044 and the cask kicked in one evening. Some early and some late hops (I used Liberty, I think) and you are sorted. Very drinkable for the summer.

Go with the Saison.
Use the lightest extract you can find,if you can find pilsner extract it would be great.
Add 10% cane sugar to get some dryness. Go for OG 1.040.
Ferment with Belle Saison, start off as close to 20c as you can and let it go!
Hops, try Bobek,Mosaic or Nelson. 10ibu at 60 and another 15-20 in the last 15 minutes.

Thanks for the suggestions guys. I haven't brewed a Saison yet and I think it's the best way to go as well.
If the tempersture does drop 18 Celsius for example, will that produce a bad result?
I know it's dependent on the yeast and the temp range, but just incase it gets cooler.

You definitely dont want any significant temp drops, especially with saison yeasts as they are notoriously finicky. Try insulating you fermentor if you can so theres no swings. If it doesnt stall the yeast, youll still get bad off flavors

Okay good to know. I'll make sure to insulate it then. The room essentially swings with the outside in the summer. It's an old drafty house.
