Hello guys, I 'm putting together two recipes for an IPA and a DIPA , but I have some doubts ...

Recipe IPA:

Recipe Type: All Grain
Yeast: US 05
Hydrate Yeast: 345ml
Batch Size (Gallons): 14.5
Original Gravity: 1.058
Final Gravity: 1.013
IBU: 50
Boiling Time (Minutes): 60
Color: 7 SRM
Primary Fermentation (# of Days & Temp): 10 at 61,3*F
Secondary Fermentation (# of Days & Temp): 3 at 64*F
Third Fermentation (# of Days & Temp): 2 at 68*F
Tasting I hope: bitterness, bright orange color and hoppy.

20.94 lbs Pale malt
6.61 lbs Wheat Pale Ale
1.10 lbs Carapils
1.10 lbs Caramunich

Mash at 152* for 60 minutes

0.35 oz Chinook (5.7%) 60 minutes
2.12 oz Cascade (8.7%) 20 minutes
2.12 oz Centennial (8.7%) 20 minutes
2.12 oz Chinook (8.7%) 20 minutes
4.41 oz Cascade or Comet Hop-Steep 30 minutes
2.82 oz Chinook Hop-Steep 30 minutes
2.82 oz Cetennial Hop-Steep 30 minutes

Dry Hop 5 Days:
3.53 oz Cascade
3.53 oz Chinook
3.53 oz Cetennial

Or:

I've never used comet hops and have no idea what they'd bring, so I can't say much about that.

I don't use nearly as much wheat malt in mine, but I am sure that amount is ok. When I use wheat malt for head retention, I skip the carapils, but I'm sure that's a personal decision and would be ok.

I like the hopping for the IPA, and use something similar in quite a few of my beers.

For the DIPA, instead of just adding corn sugar to the same grain bill, I'd consider using a couple of pounds of Munich malt in place of some of the wheat malt to give it a more malty backbone without adding more body.
 
Maybe add comet to dry hop because they are very pungent flavor and aroma and is very strong lemon and grapefruit zest with resin.
What percentage of wheat usually use?
It might be better eleminar the Carapils in IPA and eleminar malt Wheat Malt because they contribute essentially to the same "thing" for beer.
To DIPA eliminates wheat malt and increases the rest of the malts.
What do you think of this change?

You think it's still necessary to increase the amount of munich?

That's too much cara- malts. You've got over 5.5 pounds of caramunich + carapils all together. I'd get rid of the carapils for sure, and reduce the caramunich and increase the base malt, or use Munich (which is a base malt with a very "malty" flavor and aroma)>
 
These trying to tell me to reduce Munich for the same amount of Carapils or eliminate Carapils, reduce the amount of Munich 2:20 lbs and increase in base malt? Do you think the amount of Munich for ipa okay?
 
If it's going to be a DIPA, I would do something like this:

30 lbs Pale 2 Row
5 lbs Wheat Malt
3 lbs Munich
2 lbs Cane Sugar

I like to keep things simple with the grain bill when doing IPAs/DIPAs

And can you explain me what is this law of simplicity? I try to keep things simple, but I can not as you can see in the recipes I'm trying to assemble.
 
In my opinion, IPAs and DIPAs are all about hops. I like to keep the grains as simple as possible in order to let the hops shine as much as possible.
 
I like @hanuswalrus 's malt bill. With DIPAs especially you want to make sure nothing gets in the way of the hops. This can be difficult at such a high OG. So, in my opinion, the cane sugar is definitely necessary. You should also try mashing a little bit lower

The hop bills look good. I have used Comet in a number of my black IPAs and I really like it for dry hop additions

yes, @m00ps told me the same messages we had already exchanged, but the problem is I can not relate the malt with hops. I always end up adding more malt due.

I will add cane sugar for the APP! In the mash was thinking about making as follows:
Mash in: 151F- 50m
Mash out: 168F - 10m
In addition HOP @ m00ps?
I made some minor changes to hop addition (time and quantity).
If you want I can put here for you to bear me your opinion.
I'll probably use comet to boil, but very small, so that nothing goes wrong!
I will also use to dry hop along with the other varieties.
