Last week I just started making a starter for a future batch of beer. So now this starter is stepped up to four liters and is looking great. I will cold crash and brew next week with it. However I am unsure what to brew with it. I want something kind of odd, off the wall and drinkable. Here is my critieria:

11.5 gallon batch
OG between 1.050 and 1.065
IBU 40 - ????
Hop aroma and flavor emphasized
Any grain/adjunct/Flavoring is welcomed

Hops I have on hand by the pound are as follows

Cascade
liberty
centennial
Columbus
Galena
Nugget
Northern brewer
Willamete
Calypso
Magnum
Ammarillo


I was thinking of something hoppy, red to brown in color and has a spice/fruit twist. Like ginger red IPA or something......
help me brainstorm folks! thanks
 
That's the yeast Cigar City uses. A Humidor series Jai Alai clone (with Spanish Cedar), or the White Oak Jai Alai would put that yeast and some of those hops to good use! You're missing the Ahtanum and Simcoe hops, but you can use something like Calypso and Centennial in their stead and still get an awesome beer.

The recipe is online; Wayne gave it out on the Brewing Network a couple of years ago.

Efficiency: 65%

Grains

2-Row Malt 14 lbs
Caramel 60L Malt 0.75 lb
German CaraMunich I 0.75 lb
Victory Malt 0.25 lb

Hops

Ahtanum .5 oz FWH
Columbus(Tomahawk) .5 oz FWH

Amarillo 1 oz 60 Min
Ahtanum .5 oz 60 Min

Cascade 1 oz 15 Min
Centennial 1 oz 15 Min
Columbus(Tomahawk) .5 oz 15 Min

Cascade .75 oz 5 Min
Ahtanum .5 oz 5 Min
Amarillo .50 oz 5 Min

Dry Hop Cold: 2 oz Simcoe for 2 weeks.
Add 13 inch piece of spanish cedar

Mash: 154F 60 min
 
I recently brewed the CYBI Mirror Pond clone and fermented it with 1275. Similar to permo's recipe but all cacscade hops. It turned out delicious - a nice crisp, light mineral character that is a great accompaniment to the hop flavor.
