So, I have a crap ton of hops coming in soon-ish. They are the following:

1.5lb Azaaca
1/2lb Hull Melon
1/2lb El Dorado
1/2lb Mandarina Bavaria
1lb Simcoe
1/2lb Enigma
1/2lb Target
1/2lb Pilgrim
6oz Hallertau Mittelfruh

Have 21lbs of 2-row malt
10lbs Red Wheat malt
5lbs Flaked Oats
Can pick up any other malts like Caramel malts pretty easily.

3 packs of S-04 in fridge.

What sounds good to do? Was thinking a NEIPA with maybe Azacca, El Dorado, and Simcoe (maybe also Enigma) or an IPA with Mandarina and Hull Melon (I've read they compliment each other quite well). Maybe an all Simcoe IPA? All Enigma SMaSH?
 
Go for that NEIPA!
I'd limit it to using those 3 for now, unless you have a good reason to add Enigma to it or replace one of the others with it. I'm not familiar with that hop.

I did an El Dorado, Zythos, Cascade one a couple months ago. It was decent, but it felt a little weak. Likely cause of the Cascade.

So you think doing that NEIPAs schedule using a hop schedule of Azacca, El Dorado, and Simcoe would be best?

Best is subjective, that's the whole beauty of NEIPAs, and brewing in general.
Read some of that NEIPA thread to get ideas of ratios, and balance. I may do 2 parts Azacca, 2 parts El Dorado, 1 part Simcoe. But you're the chef to make it your
own, the sky's not even the limit.

Centennial works better than Cascade, IMO, with more clean citrusy prominence.

I don't think single hop NEIPAs are as good as using a blend of 2 or 3 hops. The interplay of different flavors is essential, IMO.

I'm kegging a Galaxy / Eureka (1:1) NEIPA tomorrow. And brew another 6 gallons this weekend, because this one won't last long either. I may add some Amarillo or Mandarina Bavaria to that, like half of the Galaxy amount, or the same. It will be either 2:2:1 or 1:1:1.

I used 20 grams each in the whirlpool at 170F for 15' and 40 grams each at 160F for 30'. Only 6 grams of Warrior at 60' bittering. Dry hopped once, 2 oz each. It's still pretty bitter, but a good balance, IMO. This is a "sessionable" NEIPA, OG 1.055, FG 1.015.

I really like WY1318 for NEIPAs while WY1272 brings out more of the citrus. You'd need good sized starters.

Make sure to rehydrate your S-04 exactly according to the manufacturer's instructions. And keep your Calcium Chloride level high. Like 150-200 ppm Chloride, 50 ppm Sulfate. Use MashMadeEasy mash calculator, it's free, simple to use, and works great.

Let us know what you decide, and how it turned out. You've got some great hops there to play with.

You could mash once, boil 60' with your bittering hop (or none), split volume into 4 or 5 smaller batches then finish each with different hop combos. Use small buckets or gallon jugs to ferment in. See which hop combos you like better.
