Hey,

I'm a beginner brewer looking for some advice. I've only brewed clones "kits" before and need help developing a straightforward recipe for my first "original" brew. I have 16oz of dried (not pelletizied) local CT Cascade hops that I'd like to use. I'm looking to brew an IPA or double IPA -- hop forward, citrusy, piney, NOT sweet, NOT malty. Not sure if this possible with just the Cascade but would love to give it a try if so. If necessary, (I would purchase a few additional varieties of hops to get to the flavor I'm going for.)

I need to know what type of DME and yeast to get and then general quantities/guidelines for brewin it all up.

If you don't know the AAUs of the cascade, I'd grab some neutral bittering hops (warrior, magnum, galena, even Columbus), one ounce is enough or even more than enough depending on the AAUs, and then get 8 pounds of light or extra light DME. I like some specialty grains in my IPA, but not too much. Say, 12 ounces of victory malt or crystal 40L. For yeast, a relatively neutral clean American ale yeast works great- WLP001 is my standard, but lately I've been loving Wyeast 1332 for many IPAs and hoppy pale ales.

Then, using the cascade add an ounce at 15 minutes, 5 minutes, 0 minutes, and dryhop with 1-2 ounces. That will make a very nice beer!

Once you get your bittering hops, we can help you decide how much you need for the bittering addition (probably the whole ounce, but not necessarily- I've seen some bittering hops with 17 AAUs!)

I actually was able to obtain the AAU's of the Cascade (I'm friends with the farmer). It's 6.46%. Let me know if that changes anything!
