Hi. I hope this is the right place. i am making my first batch of beer using candy sugar. my ingredients are:

1 can coopers amber malt extract
1 pound muntons amber DME
1 pound amber candy sugar
2oz cascade hops
2oz fuggles
2 packs coopers brewer yeast

ok 5 questions:
1. Do i need to add or change anything in the recipe since i am using the amber sugar?
2. Should i use both packs of yeast? i want a high grav/alc beer
3. Does the recipe look ok? taste wise anyone know what im going to be looking at?
4. Will there be any extra steps if im going for a high gravity beer?
5. I wanted to use red candi sugar but all my shop had was amber. the lady there suggested that i could use beet sugar as a substitute. any thoughts on if this would be ok or a really bad idea?

2. Is this a 5 gallon batch?
3. Looks like an amber of some sort.
4. Nope.
5. Should be fine, will be redder.
 
If you want higher abv, add more malt extract depending on what abv you want. One pack of yeast should be fine for this beer assuming the yeast is viable.
 
about how much dme would you estimate if i were already using 1 pound. maybe like 3 or 4? i want about 8-9% alc
 
ok so everything went good. i dont have a hydrometer yet so i cant tell the gravity or abv. I do have another question about dry hopping. how do you do it? when do you do it? how much do you use? and should you use the same hops you used in the beer or are a different strain better? its a 5 gallon batch, i added all the ingredients i mentioned above, but i added some uk gold hops at the start with the malt extract and DME. Any help is greatly appreciated :)
 
ok, new question, how much malt extract is too much? the recipe right now is something like this:
3 lbs LME
6 lbs DME
2 lbs candi sugar.

1. Is this too much malt for a 5 gal batch?
2. since i'm using so much DME, should i add any extra water to compensate for rehydration of the malt?
