Tell me what you think. I have all the ingredients just afraid I went to heavy on honey malt.

5# 2 row
3# flaked rice
1# honey malt
1 oz cascade for 60 min
.5 saaz for 15 min
.5 saaz for 2 min
yeast is kolsch white labs

Thanks!

With that much honey malt in such a light beer I think it will totally dominate. You will get to know the flavor well. I used .5 lbs in a slightly more assertive beer recently and the honey malt makes a strong push toward stealing the show.

I'd use a bit more 2 row and less honey malt (4oz maybe?). Why not add .5oz Cascade late? Just a dash with Saaz is very appealing.

6lb 2row
3lb flaked rice
4oz honey malt

Yeah that is a lot of honey malt. I treat honey malt like a spice a little really does go a long way. Also that flaked rice isn't going to give you much body at all. It could be a very thin honey tasting ale, but if that is what you are going for sounds like a solid recipe!

Thanks for the replies guys! I am brewing it now. Cut back to 10 oz honey malt and added 2# 6 row. Gonna do a late hop addition with northern brewer. The wort Def has a sweet taste to it but I'm hoping the bitterness will bring it back a bit.
