I'm jumping back into brewing after 4 years away. I never really graduated beyond a beginner level brewer, having only brewed about 20 gallons. I need to ease my way back into this.

The first recipe I want to try to make (in the next month) is the recommended/famous EdWort American Pale Ale Bee Cave Brewery Haus Pale Ale. It sounds right up my alley, so I'm getting enough ingredients for a second 5.5 gallon batch.

I'm not changing that recipe, but the amounts that the LME's come in are odd amounts (3.15# and 6# sizes). I will be left with 5 pounds of Extra Pale LME after making the second EdWort recipe.


Here's what I'd like to try - would it work and how do you think it will taste?:

5.5 Gallon Batch

5# Extra Pale LME
3.15# Munich LME
8 oz. Crystal 10L (steep)

Boil & Hops
1.0 oz Cascade 6.6% at 60 min.
0.5 oz. Cascade 6.6% at 30 min.
0.25 oz. Cascade 6.6% at 15 min.
0.25 oz. Cascade 6.6% at 5 min.

Safale US-05 dry yeast



Is this worth trying? Should I consider a different steeped grain, or a different kind of hops?

Essentially, it is the EdWort recipe with just a little less Extra Pale LME and about double the Munich LME.

I would have enough hops at 60 to get most of your IBU's and move the 30 min addition to 15 or less. Would be nice if you could pair a different hop with the cascade.

Do you think a 50/50 combination of Cascade (1 oz.) and German Hallertau (1 oz.) hops sounds good? Kind of a German Pale Ale?

Centennial is the classic combo for cascade. I did drink a pale ale a few months ago that had Cascade, Willamette, Golding and Hallertau to 35IBU it was a fantastic pale ale IMO.
 
Maybe I'll stick with just the Cascade. Any ideas on flavor by having the 5# Extra Pale LME with 3.15# Munich LME? Would that be a tasty way to use my extra ingredients? Or should I try to come up with something else?
 
Don't be afraid to mix hops from different areas. Apparently the famous Sierra Nevada Pale Ale uses:

cascade - american
perle - german
magnum which came from germany has well but there is an american version.

I made a red ale the other day with magnum/citra/centennial/fuggles that my friend said was delicious. I love red ale so i felt the same. :D
 
I would say that if you have tried and like an all cascade beer then go for it. I on the other hand don't like that much grapefruit flavor.
 
Look up the the extract version of Yooper's Haus Ale... It's an all Cascade APA... Though I'll often use CTZ the the 60m bittering charge...

Very flexible as a base for an APA... I've done it with various hop combos to great effect
 
If you're looking for a hop to go with your cascade...simcoe pairs very well...maybe even just dry hop the simcoe..good luck!!
 
Thank you everyone for the advice! Really excited to get started up again. I'll follow up with feedback on how it turns out.
