brewed a coffee stout one week ago.
OG was 1.060
FG is 1.020 (today’s reading)

There is no action in the Primary or the air lock.

Could I bottle and condition for 2 weeks or should I let it go another week?

I watch my beer until the yeast drops and I can see through my fermentor. This usually takes 4 weeks. Many people take 3 measurements, one each day. If the measurements don’t change you can bottle. If you do it the measurement way, I think you’ll be able to safely bottle faster.
 
I generally wait three weeks, and test only once at packaging. If the gravity seems high, I warm it for a couple of days and test again.
Waiting until it clears is good practice.

I’ve done a gravity reading the last 3 days and it has not changed.

It may be finished. Three days with the same reading is a good indication. But 1.020 is still pretty high, and there are other things the yeast does beside making alcohol. Waiting a little longer won't hurt it any, bottle bombs are a mess.

Thank you for all the advise. I decided to let it sit another week. This is my first home brew and need to have some patience.

There are correction tables on the internet.

If you take a sample and let it sit for a while, and there isn't a ton of crud in it, or on the bottom, I'd bottle. The beer is done if the gravity isn't changing, and isn't going to get "doner" leaving it sit. It will however clear a bit if it's not already clear or clearing, and you'll have less crud in your bottles if you wait until it's fairly clear. That depends alot on yeast strain- some yeast drops out well right after fermentation, and some yeast strains don't do that as quickly.
 
I would let it sit for another week or so. It might be done fermenting but no need to rush things. Usually I let my brews ferment for about two weeks and take reading at bottling.

I remember my first batches and the constant need to eye my airlock and take readings when things seemed settled. Patience comes with experience. Or not.
