When taking gravity readings such as OG I notice that when I first drop my hydrometer into the tube it will read a little higher at first and then settle down. I may read 1.040 at first and after it sits for several seconds it may read 1.035. Is this because some of the extract is settling to the bottom? Which do I take as the correct reading?

It's probably sitting on an air bubble or something of that sort. Give it a spin in the tube and maybe flick it down a few times so that any air underneath it can escape. That should help give you a steady reading.
