Hi All-

New brewer question. A buddy and I brewed a (supposedly) 10 gal all-grain batch of Maple Syrup Ale this past Sat. We followed the directions, and ended up with 13.5 gallons of wort with a SG of 1.045 (Bottom end of expected range). We frankly ran out of time brewing, as this batch took MUCH longer than expected due to using his kitchen stove (2 burners at a time) to heat the water and boil the wort. We had a yeast starter, splitting the yeast between the 3 fermenting buckets. There have been no signs of fermentation to-date in any of the buckets, and we're second guessing our decision about boiling off the remaining 3.5 gal of liquid.

Any opinions -should we boil off the 3.5 gal and re-pitch yeast? Or 'wait and see'?

Opinions are much appreciated!
Scott

Wait it out. I'm assuming you pitched saturday night so it has barely been 24 hours. It can take up to 72 sometimes depending on the size of the starter and the temp that you are keeping the fermentors. Boiling off the 3.5 gallons will make the beer stronger, but could also effect the taste because of the hops. I say leave it.

For future reference, boil to your desired volume before you make your first hop addition. It takes a bit of math and a little planning, but you'll hit your volumes.:mug:

yeah id wait a couple weeks and take a hydro reading. you dont want to boil anymore as this may throw off your hop schedule.
