I just came into possession of a huge amount (~200#) of hard white wheat. I know that it is called for in traditional lambics but I was wondering if I could use this to replace any non malted wheat (flaked or torrified)? Any suggestions are appreciated :mug:
 
You can use raw wheat it in place of flaked or torrified wheat on the condition that you do a cereal mash or pre-boil it before mashing to gelatinize its starches (something that is already done to the other types of unmalted wheat). I just did a turbid mash with 3.25 lbs of raw wheat yesterday for a Lambic.
 
Thanks, I actually just read the post on your turbid mash lambic. I wish I could do that but I will be moving soon and I don't want to disturb the beer while it ages. I guess I'll be brewing a lot of hefeweizens and wits for a while. Thanks again for the info!
