So, I read alot of threads where people say that after MONTHS thier raspberry ales are a little on the hardcore side and need to mellow. Why is this? Is this due to the ammount of raspberries used? What would one expect with 1-2lbs in a 5 gallon batch for 2 weeks in the secondary?

Not sure of the cause but my raspberry stout is over a month old and now is just starting to mellow. These were fresh berrys I picked my self at a fruit farm. The only thing I dont like is the tart/tang tast they give so far.

How much fresh fruit did you use for the stout? I am thinking of doing the same , and just want a hint of rasberry in it.
 
Yeah, I mean I have seen recipes with 5 lbs, some with 2lbs... I want a hint, not koolaid LOL I just dont want to have to wait months for it to be drinkable lol
