The article says “Typically, each barrel holds 53 gallons of bourbon and weighs about 550 pounds, according to WLKY.”

Not 31 gallons?

The barrels used by the big commercial distillers are 53 gallons - that's the standard size. Smaller craft distillers sometimes use smaller barrels - 15 or 30 gallons often.
 
I ask my wife if she would make me a big sandwich. This is what she made.
