Hey All,
First time at cider making
Have 3 gallons of black berry cider going since Fathers Day (6-17-12)
2lbs Corn Sugar, 2lbs of frozen Blackberries (thawed), 1.5 cups of honey and 2.5 gallons of Apple Juice.
Also 3 gallons of Blueberry Cider , 1.5 lbs of corn sugar, 2lbs of frozen blueberries, 32 fl oz of pure blueberry juice, and 2.5 gallons of apple juice.
Both were pitched with Safele SO4 yeast that I re-hydrated and split between the two on 6-17-12
When should I rack off the fruit? Still little bubbles coming up the sides of the better bottles.
I am also going out of town until the 14th of July. Should I rack before I leave or when I get back.
Ferment temp around 74 f (didnt have my freezer fermentor set up when I started) Hope that doesn't screw them up!
