What's the best way to minimize the amount of aeration during a transfer from primary to secondary? Or should I just dry-hop in primary and not worry about the secondary?

You have it. The best way to avoid aeration during transfer from primary to secondary is to skip the transfer altogether. Otherwise, make sure the tubing ends remain submerged as much as possible. That means that as soon as the siphon starts, get the discharge end under the beer that is transferred.
