Hi all, I'm about to keg my latest batch of cider, well, more like an apfelwein. According to my calculations it's about 9% abv and dry.

I don't want to get too hammered when I drink this and I wouldn't mind it being a bit sweet.

Do you think it would be OK if, as I keg this, to first ad some canned apple juice to the keg, then rack the cider on top of it? I hope this stuff tastes OK... if it doesn't I'll let it age in the keg. If I age it at room temperature I probably wouldn't bother adding the juice since I won't be adding potasium sorbate or anything to inhibit the yeast.
 
If you can keep it cold you can backsweeten it without adding any chemicals, which will taste better. You can use AJ concentrate to backsweeten. Depending on how it fermented out, you may get better results with Agave or a mix of cane/corn sugar, as these all affect sweetness and body differently, so it depends a lot on what your starting with. I'd recommend pouring some 4oz glasses, experiment with your various backsweeting options to see what works the best with your cider and then when you find the right mix for 4oz, scale it up to five gallons
 
Hi, thanks for the advice. I kegged the cider last night and it tasted pretty good so I left it as is.
