I just racked to secondary my winter brew, tasted a little hoppy.....will this change any as it is in secondary for a couple of weeks? I had a nice trub on the bottom of my primary this time, where as the first batch I made weeks ago didn't have that, then again I used grains this time instead of the campbell soup kit......te he.....

Here is my recipe: Also, it says to prime with Molases??? Will this give the right carbonation? I assume there is enough sugar in a 1/2 cup of Molases for this......any help would be great......Thanks

7-1/2 pounds, Klages malt
1-1/2 pounds, crystal malt (90L)
1/4 pounds, chocolate malt
1/4 pound, black patent malt
1/2 pound, dextrin powder
1/2 cup, molasses
1 teaspoon, cardamom
1 teaspoon, cinnamon
1 teaspoon, ginger
grated rind of 4 oranges
1-1/2 ounces, Nugget hops (boil)
1 ounce, Willamette hops (finish)
Whitbread ale yeast
1/2 cup, molasses (priming)

Learn to love the hops!!!

Yes, it will mellow slightly with time.
 
1/2 cup of molasses seems a bit scant, but it's best to follow the recipe. The first time!
