Ok, still my first brew. alaskan amber.

7 lbs light malt extract.
15 ounces of dark amber extract.
60 minutes cascade hops.
3 minutes of saaz hops
Safale S-04.
68-72 degrees
8 days in primary
1.057g original

Now when i racked it to the secondary, it was completly fermented out (according to the recipe) at 1.017. Ive been told to leave it in the secondary fermenter for 2 weeks, with the 1-2-3 plan.
Now i was wondering,
I asked the owner of my home-brewer store and he said that if it was fermented out, just to leave it in the secondary for 4-5 days, not to worry about how long to leave it (just enough time to get the yeast and junk to settle), then just bottle it.

Should i follow the owner, or should i follow the 1-2-3 plan??

Also i tasted it after taking the gravity and it was pretty bitter. I was wondering if its going to mellow with carbonation, or going to increase that bitterness?
 
2 weeks in the secondary allows the brew to both clear and age. In 5 weeks (2 in the secondary, 3 in the bottle) the beer will change alot. The bitterness will subside. In Mr Miyagi Voice "You must practice patience Danielson."
