Hello all..

Got another question

My 2nd batch seems to have had a quick fermentation... Within 7 hours the fermentation was off to a quick start with several bubbles every 10 seconds. This lasted through the next day (Wednesday), but I went out of town Wed. night and on Thursday afternoon, no bubbles...

So today, I opened the lid and took a hydrometer reading and put the lid back on.. My question is, since I took the lid off and introduced oxygen, and if there is no more fermentation to push out the oxygen, do i need to get ready to bottle it? I understand, or so I think, that if I were to not have opened the lid, there would have been only CO2 in the fermenter's air space, but now theres oxygen, and my assumption is that I can't let it sit around for long now...

Any opinions?

No, it'll be ok. Your beer isn't so sensitive that a quick opening for an sg check would harm it. It may not be actively fermenting, but that little bit of o2 won't hurt it. We also open it to rack, to bottle, etc. As long as you didn't splash or stir or otherwise aerate, it'll be fine.

It makes sense, but... will it be ok to last several more days... as in Sunday, before I bottle it... or get the chance to bottle it?
