quick easy question about Co2 (kegging)

If i have a keg/batch that's sitting at serving pressure (11 psi) can i remove the gas for say 3 days and come back to it later? i have another batch i want to force carb at another location and serve over thanksgiving weekend.

Yes, so long as it's fully carbed and you don't have any gas leaks.
