I'm wanting to start experimenting with ciders for SWMBO. She perfers carbonated, dry ciders along the likes of Kelly's and Strongbow. I figure I'll work on small batches until I get something that is to her liking.

I currently have a starter going with some washed Cooper's dry yeast and apple juice. I plan to pitch this in 2 gallons of juice.

How do I calculate the amount of priming sugar needed? Any harm in using table sugar to carb a cider?

You can just prime it the way you do beer- 1 ounce dextrose per gallon. Now, I've never done it with table sugar, so you'd have to make sure of the measurement. Carb tabs would work, too, I think, as well as honey or anything fermentable.

Corn Sugar - 3/4 cup
DME - 1 1/4 cup
Honey - 1 cup
Maple Syrup - 1 1/4 cup
Molasses - 1 cup
Brown Sugar - 2/3 cup
Cane Sugar - 2/3 cup

For 1 gallon batches, just divide by 5...
