ok i put 1 can of pineapple 1 can of peaches 1 can of fruit cocktail 2-3 gallons water2 cambdon pills 5 pounds of sugar putting yeast in tomorrow.. prob put 2 tbs... i got it in a 6.5 gallon glass container.with a balloon over top . my question is is this going to produce a wine ???? this is my first brew so we will see im up for suggestions too
 
well, it's not going to be beer. I wouldn't call it a wine either.

I think I'd call that 'hooch', and I wouldn't set my expectations very high.

A couple of things:
(1) what kind of yeast are you using?
(2) that balloon over the top of the carboy is probably not going to be sufficient. You are going to get more carbon dioxide than a balloon will be able to handle.

suggestions? if you want to make beer, try www.howtobrew.com. If you want to make hooch, you pretty much have that mastered already.

well like I said this is my first brew maybe in the future ill get more creative and do some research I just wanted to try to make a basic wine and yes the baloon is temp but im up for sugestions ....

I would really take some time to read up on the basics of fermentation.

Get an small airlock and rubber stopper instead of the balloon, or use a blow-off style airlock.

Using regular old canned fruit is probably a bad idea due to the large amount of cane sugar that is in there, plus you added another 5 lbs of cane sugar. (Cane sugar produces nasty flavors in large quantities, and you've got a LOT of it, in fact... it;'s just about the only fermentable sugar in there!)

Also, when you say "probably two tablespoons of yeast" it makes me think that you are using baker's/bread yeast, which is quite a bit different from the yeast used by brewers to make beer/wine/mead/cider/etc.

Just a word of warning... read up on what you are doing before you make a beverage that causes you to go blind (that is not a joke, it's possible.)

Unless those were very large cans (like No. 10) of fruit, you won't have much flavor. You are going to end up with a harsh yeasty, cidery, vaguely fruit flavored "vodka and water". Bread yeast and ale yeast are about the same as a Yorkie and a Great Dane. They are both saccharomyces cerevisiae, but have been breed (NPI) for different purposes.

The starting point for wine is 100% fruit (or a sugary vegetable like beets).

what you are trying to do is pruno (but you are missing the ketchup).

The inmates do that all the time.
In california, some prisons stopped the distribution of fruits either canned or fresh in an atempt to control the production of pruno because the intoxications were causing too much trouble and the population, that was already hard to control sober, was going really wild on he stuff. :^)

I remember reading about this, they used as a fermenter zip-lock bags in the sink (using cold/hot water to control temp) and would open the bag a couple of times a day to let the co2 out.

yeast? wild of course!

now, IMHO no need to reinvent the wheel. Wine, mead, beer, even pruno... you may find a recipe in the net....
 
hey guys, look im a collage student and ive managed to convince my science teacher to let me to a study/essay and practical experiment on brewing beer, this is my first real go at it and i have a few questions for any of you who could possibly take some time to respond haha,
1) (if any of you are good a science) I need a few actuall chemical equations that relate to brewing beer, ie CuCl + NaSO4 = CuSO4 + NaCL ( that sort of thing)

2) if anyone could suggest a good brewing book and/or website that could help me that would be greatly appreciated

3) I am a great lover of Bitter beer and a good Lager, is there a specific beer i should start with that would be easier or are they all the same

You'll find numerous equations, it can get as technical or as simple as you want it to be. He really spells out "how to brew", IMHO... GREAT book and a must have for the bookshelf. I refer to it both online and at home in paperback almost daily. It even has some recipes for you to get started with!!!

Actually it will be better than pruno not much better depending on yeast but at least you are using campden tablets to sterilize. You are on the right track with the sugar juice water and campden tablets but thats about it. You need to puree the fruit cocktail and use more than 2 campden tablets I think it is 1 tablet per gallon I may be mistaken. Let it sit for 24 hours before you add Champagne yeast 1-2 packets dry. The ballon will work temporarily becuase of the carbon dioxide being expelled. However keep in mind that like beer you will may have crap coming up and being expelled out the top of your carboy pressing through a small neck. wild yeast was definitely used but even worse some inmate would actually put bread in their sock and sweat out the yeast somehow. or just dump bits of bread in the bag with the fruit slurry. I also heard tht ketchup actually was used as the yeast somehow had yeast in it or something. Anyway found a website if anyone has balls big enough to actually make it and drink it. :rockin:

Well ive been keeping a eye on my carboy and the balloon It seems to be working (i have ordered a airlock and bung off ebay) so will keep all informed . I wonder how it will taste jim
