I brewed a easy Heffenweiezen with Barvarian wheat LME. OG 1. 051, FG 1. 014 , I added a pound of cane sugar and cascade hops 60 min , boil. 5 gal. Brew. FG. CHECKED on the fourth day after air locked stopped was 1.018 . Will it clear up faster cold crashing or leave it at 68 f. ?
 
I gotta ask too...why the pound of cane sugar? Trying to up the ABV?

I would definitely let it sit for at ferment for at least a couple of weeks
 
I'd give it another two weeks in primary. With that much sugar, it should finish drier and it will allow the yeasties to clean up. Completion of fermentation shouldn't be gauged by the bubbler. I'm an impatient man and it has taken me quite a while and much restraint to just wait for the beer to do it's thing.

yes trying to up the ABV.
 
Wait...did no one read his post?

Why are you trying to clear a Hefeweizen? Hefe and most Wheat beers will take forever to clear, and when they do they will taste nothing like a wheat beer should because a lot of their flavor comes from the yeast.

thanks wheat beers also finish faster I believe . My local brew store said it would probably be ready for bottling in about 10-12 days. The top of my carboy is clearing up , just don't want a lot of yeasties in it.

Yeast is what makes wheat beers, especially hefeweizens actually taste correct though.

Dont be afraid of some yeasties in a Hefe. They do finish fast, and should be drank asap, dont age them for sure...i found some bottled Hefe i forgot about and it was totally clear and tasted like watered down light beer.

I tested FG Today it's at 1.016 went down two points since yesterday should finish out at 1.014-1.012

That FG was per brewers calculator I will wait a couple of days And check again . Thanks
