I normally rehydrate when using dry yeast. I know this step is debatable but its pretty easy to do so I figure its good to get in the habit. I use this method:
When using one 11.5g packet I rehydrate in 1 cup of sterile water.
If I am going to pitch two packets of dry yeast, should I then rehydrate in 2 cups of sterile water or would 1 cup of sterile water with two packets of dry yeast suffice?
