Hello I'm pretty new to homebrewing (only done 1 Mr. Beer recipe, the one that came with it at that) and am now getting ready to do a couple batches of EdWort's Apfelwein. The one question I've searched for an answer to but couldn't find was this, because I'm not doing a full 5 gallon batch of apfelwein should I use less yeast? Or would it be fine just to pitch the whole packet (5 gram packet of Montrachet)? Thanks in advance for any help.
 
You want to figure out the pitching rate recommended for Apfelwein (IDK) and then pitch that amount of yeast. So, in short if a 5 gram pack of yeast is appropriate for 5 gallons you will need less for a smaller batch...again, how much I do not know as I have no experience with Apfelwein.
 
I think you would be alright with a whole pack. You are looking at for that recipe 1.060 or better start, a little extra yeast won't hurt a 3 or 4 gal batch.
