So I brewed a big beer the other day. I am going on 34 hours right now, with only a few small little pea sized pockets of bubbles on top of the wort. When I say a few, I mean I can count about 6 or 7. I got a little higher than expected efficiency and ended up with 1.095 SG. Expected only 1.075-1.080. It's a heavily hopped DIPA. I used Omega DIPA Yeast and did not make a starter. Yes, I know the best way is to do so, but I am new to liquid yeast and my last one was a smack pack. This one wasn't. So... brewersfriend said I needed 152B cells, Omega pack says it has 150B, I figured I'd be fine without it.
At what point do I scratch the hopes of this yeast finishing the job and just pitch a pack of notty? I really wanted the aroma and flavor of this conan yeast though.
Or should I wait it out another day?
