I just brewed my first English mild over the weekend. I plan to carbonate it to the appropriate level (~ 1.5). It occurred to me, though, that my serving pressure (10-12 psi) will cause the beer to become carbonated to a higher level. Maybe there is an obvious answer here that I am overlooking, but other than cask (I wish!), how do you dispense such an ale without making it more effervescent in the process?

you need a secondary regulator to drop the PSI to that keg . You will have a very slow unless you up the pressure then lower it back down and bleed the keg.
 
I generally get my low carb'd beers to proper pressure and simply shut off the gas to that keg. (I have a manifold).

Then when serving, I just open the valve enough to push the beer several pints at a time and then shut her off again when finished. :mug:
