Question about extract brewing

My brother is starting to get into brewing, and for the time being he's more interested in extract brewing. I wanted to get him a few extract kits for Xmas but I don't really know much about extract brewing so I had a few questions.

1. Besides the price is there a difference in lme and dme?
2. I'm looking at a recipe from brewing classic styles, California common page 108. The recipe calls for 7lbs light lme and 1.1 lbs Munich lme, my lhbs doesn't carry Munich lme can I just replace that with the 1.25lbs all grain option?
3. Would I need the same amount of lme vs dme?

Are you really going to get him an extract kit or do you plan on making up a kit for him? He can make an extract kit with either LME or DME or a mix of both and they can turn out good as long as he is careful with mixing in the LME so it doesn't go to the bottom of the pot and scorch and if he adds it later in the boil so it doesn't get darker than anticipated. LME can be somewhat of a problem if it has been in the container too long (not fresh) as it may leave a "twang" to the beer but being a new brewer he may not even notice.
 
If I was getting an extract kit, I probably wouldn't use my own recipe. There are a lot of good kits available online.

Use the "brewbuilder" tool.
