Good morning!

Getting ready to harvest apples from the backyard. I tried my hand at a cider a few years ago with success. This year I’m thinking about adding apples to my Pumpkin Pie Ale. Just wondering if anyone has thoughts on the best way to incorporate the apples?
I’m a partial mash guy so thinking
1. Quarter and seed the apples and throw them in the mash? Or
2. Quarter and seed them and throw them in the final :15 - :20 min of the boil? Or
3. Puree and boil them and add to the boil or fermenter? Or
4. Juice some (this is my last option because it is a lot of work) and replace a gallon or two of the water for the boil?

Thanks for the replies!🍎🎃

Didn’t purée but rather quartered and seeded about 5#. Sauteed them to soften and added them along with the roasted pumpkin to the last :15 of the boil. Kegging today.

Let me know how this goes. Always trying to tweak / improve my early winter pumpkin ale. This year I'm trying a vanilla bean-bourbon tincture, and (maybe) some bourbon flavored maple syrup to prime.
