Where did summer go? I had plans for a bunch of fall beers, next thing i know its labor day weekend. Anyways im gonna do an all grain pumpkin ale this weekend. Plan on using baked pumpkin in the mash and pumpkin pie spices in the fermentor. This isnt my first pumpkin ale but it will be my first 10gal batch. I plan on doing a yeast starter tomorrow but it got me thinking what yeast should i use?
I have used wyeast american ale in the past and understand it and cali ale 001 give clean neutral flavors but would i benefit from using a yeast that gives some flavor?
In the end i would like the pumpkin and spices to shine. Also because of the time of year it needs to be a strain that gets done relatively quick so this can be ready for mid october.

Pacific ale wpl041
Bedford ale wpl006
French saison 3711
Edinburgh ale wpl028

Once again thinking of staying away from 001, 1056 & 1272, leaning towards French saison
Whats people's thoughts? Also i could make a run to pick up any other suggestions (tho i only really use white labs or wyeast strains)
