So I'm getting back into brewing and looking at all sorts of YouTube videos. I just viewed one on Bayou Classic kab4 banjo burner. He used a sheet of stainless steel as a heat shield. Doesn't this kinda of defeat the efficiency of the burner? I'm assuming it is to protect the 3-piece valve and thermometer he was using.
I will appreciate any comments on this, thank you.

Can you link the video? That's the burner that I've picked to upgrade. I'd like to see how they're using the sheet metal. I've seen shields that are small just below the valve that may be worthwhile.

The little shield just sits under the edge of the pot and keeps the ball valve and sight glass from melting.

Ok, I bailed on the video when he stuck that piece of ss under there. He doesn't understand that his heat shield is shielding half of his kettle as well. Get the little clip-on heat shields Brewhardware sells and all will be in order.

The way he put the steel in video will work to protect the valve etc, but it will drop the efficiency of the burner. I welded a tab on mine to protect the valve, works as planned:
