So I'm getting back into brewing and looking at all sorts of YouTube videos. I just viewed one on Bayou Classic kab4 banjo burner. He used a sheet of stainless steel as a heat shield. Doesn't this kinda of defeat the efficiency of the burner? I'm assuming it is to protect the 3-piece valve and thermometer he was using.
