I have been having a hell of a time getting the carbonation right in my beers so maybe some of you can help me out.

So I bottle in bottles that range from 20-22 oz, priming the whole 5 gallon batch with between 90-100 g of table sugar. I let them prime up for about two weeks, then when I opened them after only a day in the fridge the carbonation and head was good, but after pouring the first beer and putting the bottle back in the fridge it would foam over inside the fridge. Not a huge deal but the less I piss off my wife the better, and that didn't help.

So I read up that I should put them in the fridge for 2 or 3 days before opening. When I do that no foaming over but the head totally disappeared on the first glass and then was minimal on the second glass.

And then last night, after they had been in the bottle for 5 or 6 weeks, the top popped off one of the bottles and i had beer/foam all over the floor in the room where I keep the bottles.

So what am I doing wrong? any ideas?
 
Sounds like you are over priming your beer.
What is your process?
I bottle about 5 to 6 gallons and prime my beer in the bottling bucket with around 110 to 120g of prepared dextrose solution. There are calculators online to help with your priming depending on how carbed you want vs quantity of beer to bottle.
 
Hoofer - i updated the original post with the amount of sugar I use, between 90-100 g of table sugar. Do you think that is too much?
 
Why are you putting a 20oz bottle back in the fridge? It should be empty once you pour it into a glass (if not, then you need a bigger glass).

The amount of priming sugar isn't excessive. Are you sure that fermentation was complete before you began bottling?
 
K-moe - yes, i guess i do need a bigger glass, though i did just get a slightly upgrade. the standard glass here in Thailand is Asian size, not American size, meaning you get about 3.5 out of a 20 oz bottle. Just upgraded to one where I only get 2, and that was hard enough to find. An even bigger one will take a bit of searching.

Not entirely sure fermentation was finished, but I left it in the fermentor for 3 weeks.
