Hi,

I have a chest freezer hooked up with a temperature controller. It holds 2 5gal buckets. I will start brewing every weekend now, Ales only, so I only will be able to have 2 brews in the temperature control at a given time on the primary fermentation.

Question: how long do I need to keep the brew on the temperature control during the active phase? Will it hurt if I remove the bucket from the chamber 1 week after pitch and leave it on the open air (80F) for more 1 week for dry-hop and yeast self cleaning?

I dont see a problem with it
U can do the dry hop after 4 days and leave it in the freezer.
after the end of the week to leave it out of the freezer for the new 2 buckets
 
I think 80F is a bit warm to put it into until you're sure you're finished the bulk of fermenting. That might often be a week but might be longer for some brews. If you really need to get them out of the chamber in a hurry you'll want to initially ferment a bit warmer than usual, which might result in off flavours.
Turning over 10 gallons a week is a pretty large pipeline, if you can control the temperature for longer than a week you'll get less but better beer.
