Like a Grodziskie? I just brewed one and I plan to bottle next week.

Basically 100% Weyermann smoked wheat malt, Lubelski hops (or some German noble hop if you can't get Lubelski). Pitch any neutral ale yeast.

I tried the first one today after 2 weeks in the bottle. Nice smoky aroma and flavor, hops balanced (I used Triple Perle--not exactly the traditional hops, but it's what I had). Some chill haze, but I don't care. Nice summer beer at 3.6% ABV.

If typical Polish styles are sought for, it's Baltic Porter (rather than Grätzer) that is the most typical of them. Unlike Grätzer, it's not a lost-and-revived regional specialty but a solid staple of Polish beer scene, never ceasing its popularity - like Okocim Porter f.ex.

There's a recipe for Okocim in Szamatulski's "Clone Brews" (there's also a recipe for another immensely popular Polish beer, Żywiec, a Pilsner-type lager).

did 100% EichenRauchWeizenMalz Grätzer several times... no enzymes... no stuck sparges... 78% extraction efficiency...
Not sure if 100% Wheat Malt is capable of converting adjunct unmalted grains, but it perfectly converts itself.
