Recently tasted a plum wheat at Capitol City Brewing in DC. I am hoping to make something similar (not necessarily clone), and wondered if anyone had any input as to how I incorporate the plummy goodness? I am new to brewing, and figured on finding a decent-looking wheat recipe and throwing in the fruit as needed.

I was thinking I could use prunes to get the flavor (as well as extra fermentables). Should I do that in the primary or secondary?

Any advice appreciated.
 
I should get over to Cap City, I haven't been there in a while.

I don't know if prunes would give you the same taste that fresh fruit would. I've only made a fruit beer once, but I feel like the fresh fruit was the key. I would just chop up some plums (pitting them as well), pasteurize them, and toss them in when you rack to secondary.

C.O. is right. Prunes won't give you a plum flavor; they will give you a prune flavor, and that's not the same. Think about the difference between grapes and raisins.

Other than that, I can't give you much advice. I've never worked with fresh fruit in beer. One of these days . . . .

Thanks for the info - I will definitely seek out some fresh plums then.

C.O. - You should also try DuClaw in Bowie. They've got some pretty decent beer (try the sampler!) and great food too.
 
yup, i never got drunk on a laxative ,but you will deffinatly hate yourself in the morning .i promise ,lmao
 
Yikes! In an effort to avoid such a pleasant fate as laxative beer, I will forget the prune idea. Thanks for the warning!
 
Steep some bran as specialty grains for that extra 'regular' effect.:cross:
