Apologies if this is the incorrect forum.

I have asked Santa to bring me the Pliny clone from Northern Brewer. It was ordered with Safale US-05. Questions:

1. Should I double pitch the Safale or would 1 pack be enough?

2. My ambient basement temp is between 62 deg F -- 64 deg F. Is this too cool to completely ferment this beer?

Open to any other advice/suggestions. :)

You need about 1 1/2 packages of S05- so calling it two would be ok. Your ambient temperature is a bit low, but it will ferment just fine. I prefer the flavor of S05 at 65-68 degrees, but with a Pliny clone, the yeast character may not even be noticeable.
