When it comes to the talk of DG being chalky, a brewer who will remain nameless insisted that it's as a result of DG's refusal to add a tiny fraction of crystal malt which can allegedly avoid that. I'm not a brewer, just throwing what I've been told out there. Whatever the reason, I totally get what the detractors are getting at. Though my Aevum cans were pretty excellent with a little more than a week on them.
As for Insurrection, I definitely welcome their eventual addition of a koelschip. Their sours and saisons are my favorite things that they produce.
