Would it be ok to ferment out with us05 for a week then rack it into a 5 gallon secondary and pitch wyeast 3278 lambic blend? Reason im thinking of doing this is i dont want to tie up a 6 gallon carboy for over a year and the 5 gallon carboy i hardly ever use,I would ferment it in the 5 gallon carboy from the start but its too small for high krausen, plus i dont want to put any other culture in my main fermenters might be paranoid
 
Yes you can do that. I would mash a little high, and leave something for your bugs to work with. I would def get some sour dregs going in there as well.
 
It really depends on what you are going for. The proposed strategy will give you something a little tart and funky but it won't be very lambic like. You could just do a 4 gallon batch in the 5 gallon fermentor for starting out and then top it up with some fresh boiled and chilled wort next time you brew.

You know thats sounds fine with me cause i plan on adding apricots and i want the fruit to be the star player in this beer, Not looking to get heavy sour flavors or heavy funk just some complexity..im just gonna go for it ..thanks for you advice

Sounds good. Just give it a taste at about three months in the secondary. If you want more acidity try some aggressive dregs like Cascade, or JP. I like to do a mini starter with the dregs and pitch them when I see some activity.
 
Paranoid. ;)

Glass cleans up and will sani just fine. Its the racking tubing and cane (if plastic) you need to worry about. But pitching later will work.

yes paranoid, i even keep my grains,mash tun, grain mill in separate rooms then my fermenters.
