I've never repitched onto a yeast cake so I'm looking for a little help here.
I just kegged a Kolsch that I made with WLP029 and I was thinking of making a Mocktoberfest by pitching onto that yeast cake. I had this epiphany after I was already siphoning the beer out and into the second keg so I was kind of committed to emptying the fermenter at that point. The first fermenter was already emptied and rinsed out so I have yeast from 5.5 gallons left.
I left a little beer in the carboy so the yeast isn’t exposed to air but I'm wondering how long I can keep it like that? If I leave it like that in the basement for a week or two will that be viable yeast? I could do all the washing and everything and build up a new starter but I'd rather not deal with that. I could probably get the carboy into the fridge if that would help?
How much Oktoberfest beer could I ferment with that yeast? Could I stretch it out for another 11-gallon batch?
