Tried brewing a pineapple wheat using pineapple puree in secondary with a 3 day dry hop of mosaic and amarillo and added about 2.5 fl oz extract (in 5 gal batch) at kegging. Getting a very predominant chemical taste from the extract. Drinkable but not really enjoyable. Plus there is no way I'll be sharing this one. Next time I think I'll use potassium sorbate and pineapple juice at kegging instead of secondary puree and extract. Anyone make a successful pineapple wheat that had a sweet up front pineapple taste?
 
I assume the extract was pineapple extract (you didn’t specify)? Why purée and extract?

Yes it was pineapple extract. I did both because the pineapple sweetness fermented out and all that was left was the citric bitterness. So I added the extract to try and add back some of the flavor I was looking for.
 
I had great success with adding pineapple juice to the keg. Everybody loved it and my wife still says that was her favorite beer that I have made. The only problem is that you have to pick up the keg and invert it every now and then because the juice will settle at the bottom and you will get a glass of juice LOL.

Lol, good to know. Did you use any potassium sorbate or just rely on the cold temp to prevent fermentation?

Just cold temps but also I think the keg was empty in like 2 weeks after kegging. Just enough time to carb it and drink it LOL.
